Chufa flour or Tiger Nut Flour Fine is made from ground chufas which are then sifted.
The chufa flour is organic, 'raw' and free from gluten, nuts, soy, lactose (dairy-free) and allergens. Rich in fibre that acts as a prebiotic, a nutrient for good gut bacteria.
Chufas contain the minerals magnesium and iron and are rich in phosphorus and potassium.
Use
The flour is very suitable for baking. Compared to other flours, chufa flour has the advantage of being sweet, you need to add a lot less sugar in recipes. It is a bit drier than other flours (not as dry as coconut flour), it benefits the recipe if you add some extra moisture in the form of apple sauce or puree of pumpkin or parsnip.

hai, I am very satisfied with this product and am now going to order it for the 3rd time, but this time immediately 2 x 1 kilo. I make a bread cake from it in the breadmaker, a simple and easy (versatile) recipe with ripe bananas and coconut fat. What an invention! Especially the unpeeled chufas are sooooo terribly delicious, ideal alternative when you are not allowed nuts.
I have also made chufa milk myself and it is also delicious, with a little carob or cocoa you have the ideal chocolate milk but healthy.
Biscuits, bread etc I am still experimenting with but am pleasantly surprised. Highly recommended!

I am very allergic to wheat, but I also get health issues after eating all grains, pseudo-grains, seeds and nuts, I guess because it is close. I was pleasantly surprised when I came across chufa flour, as it is something completely different. Following the recipe that came with it, I baked delicious biscuits! As a cake base or flat bread, it is also very suitable. I also think an additional important health advantage is that this dough is delicious without sweeteners (e.g. with only sultanas) and with little butter or oil.
The funny thing is that chufa is not completely unfamiliar to me, because in Spain, you come across the drink horchata, made from it, in bars everywhere.
