These are the original chufas, also called ground almonds or tiger nuts. These chufas are small, which is nice on the one hand because you can basically eat them right out of the bag. If you make them into horchata, you will notice in the flavour that they are slightly earthier and slightly less creamy, due to the fact that there is proportionally more outside than inside compared to the larger-sized chufa.
The chufa is not a nut but a root vegetable. They are raw and allergen-free. Rich in fibre that acts as a prebiotic, a nutrient for good gut bacteria. Chufas contain the minerals magnesium and iron and are rich in phosphorus and potassium.
Use
This chufa is most commonly used to make horchata! A sweet vegetable milk what has been sold on the streets of Valencia for centuries. Soak them in water in the fridge for 24 hours, then grind them with 3 to 4 times as much fresh water in a blender or ChufaMix together with a date and some salt. Leave for a while in the fridge and drink ice cold. The pulp is given to donkeys in Spain!
