These are the original chufas, also called ground almonds or tiger nuts. These chufas are of the larger size which makes for a delicious horchata.
The chufa is not a nut but a root vegetable. They are raw and allergen-free. Rich in fibre that acts as a prebiotic, a nutrient for good gut bacteria. Chufas contain the minerals magnesium and iron and are rich in phosphorus and potassium.
Use
This chufa is most commonly used to make horchata! A sweet vegetable milk what has been sold on the streets of Valencia for centuries. Soak them in water in the fridge for 24 hours, then grind them with 3 to 4 times as much fresh water in a blender or ChufaMix together with a date and some salt. Leave for a while in the fridge and drink ice cold. The pulp is given to donkeys in Spain!
