Chufa flour (or tiger nut flour) extra fine is made from ground chufas which are then sieved several times.
The chufa flour is organic, 'raw' and free from gluten, nuts, soy, lactose (dairy-free) and allergens. Rich in fibre that acts as a prebiotic, a nutrient for good gut bacteria.
Chufas contain the minerals magnesium and iron and are rich in phosphorus and potassium.
Use
The advantage of this extra fine flour is its finer texture which makes it very suitable for baking. Compared to other flours, chufa flour has the advantage of being sweet! You need to add a lot less sugar in recipes. It is a bit drier than other flours (not as dry as coconut flour), it benefits the recipe if you add some extra moisture in the form of apple sauce or puree of pumpkin or parsnip.

I am on an AIP restricted diet so most flours are not allowed. Tigernut flour is allowing me to bake cakes and muffins as it is AIP compliant. It is delicious too so do not feel like I am on a restricted diet with this flour.

A delicious, sweet flour, sweeter than almond flour. I baked the biscuits according to the basic recipe (also available on the site here).
I was surprised how little sugar was needed in it and did a little more myself than the recipe said but not needed at all!
