These are the original chufas, also called ground almonds or tiger nuts. They are not a nut but a root vegetable. They are organic, raw and allergen-free. Rich in fibre that acts as a prebiotic, a nutrient for good gut bacteria. Chufas contain the minerals magnesium and iron and are rich in phosphorus and potassium.
Use
These chufas can be eaten straight from the bag, however, it takes considerable chewing. Peeled chufas are better for this or you soak them for 12 hours first, they will soften a bit.
This chufa is most commonly used to make horchata! A sweet vegetable milk what has been sold on the streets of Valencia for centuries. Soak them in water in the fridge for 24 hours, then grind them with 3 to 4 times as much fresh water in a blender or Vegan Milker together with a date and some salt. Leave for a while in the fridge and drink ice cold. The pulp is given to donkeys in Spain!

Probably my two stars are based on no experience: the chufas are sublimely hard! Even after two nights of soaking. I have a professional hand blender, but it still found it pretty hard. I didn't like the milk of the chufas either. Did I have to boil the nuts first or what?

You can make delicious sweet milky drinks from chufa nuts. I also like to nibble them like this. Soak them in water overnight to make them crunchy. They are very healthy.
